This makes for great finger food!! It's bite-sized and delicious!
I made chicken salad with the 2 cans of chicken (in water, not oil), about 2 tablespoons of mayo (adding more later is easier than taking away.. haha), a few pinches of tarragon, and some salt and pepper. I also added some diced up celery to add crunch.
Then, I cut up a cucumber into approximately 1 inch slices.. using a spoon to scoop out the middle of each slice. Scoop a spoonful of chicken salad into each cucumber slice.
Then, dice a few pieces of a red bell pepper for decoration on top of the cucumber slice. I also added a little piece of celery leaf to each slice as well.
Yum!!!
